  • 45 minutes
  • 8 Servings

Ingredients

1/2 pound ground beef (90% lean)
1 onion, chopped
1 garlic clove, minced
1 can diced tomatoes, low-sodium (16 ounces)
1 1/2 cups tomato sauce or tomato juice
1 1/2 cups water
1 can of beans (kidney beans, black beans, or cannellini beans)
1 small to medium head of cabbage, chopped into bite-sized pieces

Directions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic. Drain off any excess fat.
  2. Transfer the cooked meat to a large pot and add water, diced tomatoes, and tomato sauce (or juice). Cook until the cabbage is almost tender.
  3. Add the can of beans to the pot and cook for an additional five minutes.
  4. Serve the stew hot.

Notes

Use a combination of minced beef and pork to enhance the flavor and texture of the stew, or opt for ground turkey or chicken for a lighter alternative.

For a thicker stew, consider adding a tablespoon of flour or cornstarch to the pot before adding the broth.

Save time by using pre-shredded cabbage or coleslaw mix instead of chopping a whole head of cabbage.

For a spicier kick, sprinkle in a pinch of cayenne pepper or red pepper flakes.

This stew can be prepared in advance and stored in the refrigerator or freezer for convenient meal prep.

Add variety by experimenting with different types of beans, such as chickpeas or navy beans.

Elevate the presentation and flavor by garnishing the stew with fresh herbs like parsley or cilantro.
