Tomato Basil Bruschetta

Ingredients

8 ripe Roma plum tomatoes, chopped
2 cloves of garlic, minced
1/2 red onion, chopped
6 fresh basil leaves
2 tablespoons extra-virgin olive oil
Optional: salt, to taste
Optional: pepper, to taste
2 mini French bread or Italian bread, cut into 1/2 inch diagonal slices

Directions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a bowl, combine the chopped tomatoes, minced garlic, chopped red onion, basil leaves, and olive oil. Season with salt and freshly ground black pepper to taste, if desired. Set the mixture aside.
  3. Arrange the bread slices on a baking sheet in a single layer. Bake them in the preheated oven for about 5 to 7 minutes, or until they start to brown slightly.
  4. Remove the bread from the oven and transfer it to a serving platter.
  5. Serve the tomato mixture in a separate bowl with a serving spoon, allowing everyone to help themselves.
