Fusion Sesame Oil Chicken Soup

Ingredients

8 bone-in chicken thighs, cut into cubes
1/4 cup of sesame oil
1/4 cup of avocado oil
8 cloves of garlic
2 inches of ginger root, skin removed, cut into cubes, and crushed slightly
1/2 cup of goji berries
2 cup of dry white wine
2 cups of water
Salt and pepper for taste

Directions

  1. In a large pot, add the avocado oil and heat over medium heat. Ensure the pot is hot before proceeding to the next step.
  2. Add the cubed chicken thighs to the heated pot. Sear the chicken on both sides for about 2-3 minutes, or until they turn a golden brown in color. Turn the pieces occasionally to ensure even browning.
  3. Season the seared chicken with salt and pepper to your taste. Follow up with the addition of minced garlic and crushed ginger. Stir everything well to ensure the spices are mixed uniformly with the chicken.
  4. Pour in the dry white wine, using it to deglaze the pot. Stir gently to loosen any flavorful bits stuck to the bottom of the pot. This adds a depth of flavor to the soup.
  5. Reduce the heat to low and let the mixture simmer uncovered for about 10 minutes. This allows the wine to reduce and intensify in flavor.
  6. Sprinkle in the goji berries, stirring them into the mixture.
  7. Pour in enough water or low sodium chicken stock to completely cover the chicken. The amount may vary, but typically 3-4 cups should suffice.
  8. Drizzle in the sesame oil, stirring it through the mixture to distribute evenly.
  9. Place the lid on the pot, leaving it slightly ajar to allow some steam to escape. Let the soup simmer for about 10-15 minutes, allowing the flavors to meld together beautifully.
  10. Do a final taste check and adjust the seasoning if needed.
