Hearty Chicken Drumette Soup


This is an easy version of vegetable soup with chicken, an excellent choice for a busy day dinner. Ingredients

10-12 chicken wing drumettes (approximately 0.75 pounds)
3 cups of chicken broth
1 pound of fresh carrots, peeled and diced
2 pounds of fresh potatoes, peeled and diced

Directions

  1. In a large pot, add the chicken drumettes and chicken broth. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium-low and let it simmer. Cover the pot and let the chicken cook for about 20-30 minutes, or until the chicken is fully cooked.
  3. Remove the chicken drumettes from the broth and set them aside to cool. Once cool, you can opt to remove the meat from the bones if preferred, or leave them as is for a more rustic soup.
  4. While the chicken is cooling, add the diced carrots and potatoes to the chicken broth in the pot.
  5. Increase the heat to medium and cook the vegetables in the broth until they are tender, about 20-25 minutes.
  6. Once the vegetables are cooked and the chicken has cooled, add the chicken back into the pot. Stir well to combine and let it cook for an additional 5-10 minutes, until the soup is heated through.
  7. Season with salt and pepper to taste, and serve hot. Enjoy your homemade soup made with fresh ingredients!

Use homemade chicken broth: Use homemade chicken broth is a great way to add flavor to the soup. If you have the time, you can make the broth from scratch by simmering chicken bones, vegetables, and herbs in water for several hours.
