Stir-Fried Chicken with Gochujang


The spicy-sweet aromas of traditional Korean gochujang sauce blend with succulent chicken thighs in this recipe. It's quick and simple to make, making it ideal for a tasty midweek dinner.

Ingredients

1 pound boneless, skinless chicken thighs, diced
1 large onion, thinly sliced
2 green onions, chopped
6 cloves garlic, minced
2 red chilies, thinly sliced
1-inch piece of fresh ginger, peeled and thinly sliced
2 tablespoons avocado oil
For the Gochujang Sauce Mix:
3 tablespoons Gochujang sauce (Korean red chili paste)
2 tablespoons soy sauce
2 tablespoons dry white wine
Salt and pepper to taste

Directions

    Prepare the sauce:

  1. In a bowl, combine the Gochujang sauce, soy sauce, dry white wine, and a pinch of salt and pepper. Stir until well combined, then set aside.
  2. Stir-Fry the ingredients:

  3. Heat the avocado oil in a large frying pan or wok over medium-high heat.
  4. Add the sliced onion, minced garlic, sliced ginger, and red chilies. Stir-fry for about 2-3 minutes, or until the onions start to soften and the garlic and ginger become fragrant.
  5. In the same pan, add the chicken and sauce mixture, stirring until the chicken is well coated.
  6. Add the dry wine and water, then cover and allow the chicken to simmer for 10 minutes.
  7. Uncover and let it simmer for an additional 5–10 minutes.
  8. Add green onions and simmer for an extra 2 minutes until the chicken is fully cooked.
  9. Serve it hot for best flavor

Notes

Marinate the Chicken: Marinating the chicken in a little soy sauce, sesame oil, and rice wine can give it extra flavor. If you have the time, let the chicken marinate for at least 20 minutes before you start cooking.

Vegetable Selection: You can add a variety of vegetables to make this dish more colorful and nutritious. Red and green bell peppers, carrots, onions, and broccoli all work well.

Use Authentic Gochujang: The flavor of the gochujang can make or break this dish. Try to use an authentic Korean gochujang for the best flavor. If it's too spicy, you can cut it with a bit of honey or sugar.

Serving Suggestions: This dish is traditionally served with rice. You could also consider serving it with some kimchi on the side for added flavor and texture.

Heat Level Adjustment: If you prefer your dish more or less spicy, feel free to adjust the amount of gochujang used in the recipe.
