Apple Cake with Apricot Jam

Ingredients

10 tablespoons of butter
3/4 cup of sugar
3 eggs
1 3/4 cups of sifted flour
2 teaspoons of baking powder
1 tablespoon of grated lemon rind
2 medium-sized apples, peeled, cored, and sliced
2 teaspoons of additional sugar
1/2 cup (8 tablespoons) of apricot jam

Directions

  1. Start by preheating your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the butter and sugar together until you achieve a smooth, creamy texture.
  3. Next, add the eggs to the mixture, one at a time. Ensure each egg is well incorporated before adding the next.
  4. Gradually add the sifted flour, baking powder, and grated lemon rind to the mixture. Beat this for about 4 minutes until everything is well combined.
  5. Pour this cake batter into a greased 9-inch springform pan.
  6. Arrange the apple slices on top of the batter, creating a pattern of your choice. Sprinkle the arranged apples with the additional 2 teaspoons of sugar.
  7. Place the pan in the preheated oven and bake for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
  8. Once done, remove the cake from the oven and carefully remove it from the pan.
  9. While the cake is still warm, brush the apple slices with the apricot jam.
  10. Allow the cake to cool before serving.

Notes

Choose the Right Apples: For best results, use apples that are tart and firm, such as Granny Smith or Honeycrisp. These varieties hold up well to baking and provide a nice contrast to the sweet cake.

Sifting Flour: Don't skip the step of sifting the flour. Sifting helps to aerate the flour, resulting in a lighter, more delicate crumb in the finished cake.
