Applesauce Raisin Cookies

This simple spice cookie recipe, featuring applesauce as its star ingredient, creates a delightfully moist and naturally sweet treat. The marriage of warm spices and applesauce not only results in a deliciously soft cookie, but it also fills your kitchen with a comforting aroma that epitomizes home-baked goodness.

  • 32 minutes
  • 12 Servings

Ingredients

1 cup sugar
1/2 cup margarine (or butter or shortening)
1 egg
2 teaspoons baking soda
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce
1 cup raisins
1 cup nuts (optional)

Directions

  1. Start by preheating your oven to 350°F (180°C). Meanwhile, prepare your baking pan or cookie sheet as needed.
  2. In a large mixing bowl, cream together the sugar, shortening, and egg until well combined and smooth.
  3. In a separate bowl, combine the baking soda, all-purpose flour, salt, and cinnamon. Ensure these dry ingredients are thoroughly mixed together.
  4. Gradually stir the dry flour mixture into the creamed shortening mixture. Mix just until the dry ingredients are moistened and the batter is evenly combined.
  5. Next, fold in the unsweetened applesauce, raisins, and nuts (if using) into the batter.
  6. Drop the dough by heaping teaspoonfuls onto a greased baking sheet, making sure to leave several inches of space between each cookie. Bake in your preheated oven for 10 to 12 minutes, or until the cookies are lightly golden and set.

Notes

Measure Correctly: When baking, accurate measurements are key. Always level off your measuring cups or spoons for the most precise measurements.

Room Temperature Ingredients: For the best results, have your margarine (or butter) and egg at room temperature before starting the recipe.

Mixing: When combining the dry and wet ingredients, be careful not to over-mix as it can make your cookies or cake dense. Stir until just combined.

Baking Pans: If you're making cookies, consider using a silicone baking mat or parchment paper on your baking sheet. It makes for easier cleanup and helps prevent the cookies from sticking. If baking a cake, make sure to grease and flour your pan for easy removal.

Test for Doneness: Everyone's oven is slightly different. Start checking your cookies or cake a few minutes before the recommended baking time to prevent over-baking. The cookies are done when they're lightly golden, and a toothpick inserted into the center of the cake should come out clean.

Cooling: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack. If you've made a cake, let it cool in the pan for about 10 minutes before removing it.

Storage: Once completely cooled, store your cookies or cake in an airtight container to keep them fresh.
