Omelet in a Mug


Start your day off right with this quick and easy Veggie Omelet in a Mug recipe. Combine all of your ingredients in a mug, pop it in the microwave, and breakfast is ready!

Ingredients

2 eggs
2 tablespoons 1% low-fat milk (or nonfat/skim milk)
1 pinch of salt
1 pinch of pepper
1/4 cup finely chopped hot dog and tomatoes (or your favorite vegetables)
2 tablespoons shredded cheddar cheese (or your favorite cheese)

Directions

  1. Lightly grease the inside of a 12-ounce microwave-safe mug.
  2. In the mug, use a fork to combine the eggs, milk, salt, and pepper. Stir well until thoroughly mixed. Add the hot dog, vegetables, and cheese, and stir again.
  3. Place the mug in the microwave and cook on HIGH for 45 seconds. Remove and stir the mixture. Return to the microwave and cook on HIGH until the omelet has puffed and set, which usually takes 60 to 90 seconds.

Notes

Use a large, microwave-safe mug or ramekin to make sure there is enough room for the omelet to rise without spilling over.

Beat the eggs and milk together thoroughly before adding any other ingredients to ensure a smooth and even texture.

Use any veggies you like, such as bell peppers, onions, spinach, tomatoes, mushrooms, or zucchini. Make sure to chop them into small pieces so that they cook evenly.

Microwave the omelet in 30-second intervals to prevent overcooking. Depending on the power of your microwave, it may take 1-3 minutes for the omelet to cook.

Use a fork or whisk to gently stir the omelet between microwave intervals to ensure that it cooks evenly.

Don't overfill the mug with ingredients, as the omelet will puff up while cooking and spill over the sides.

Let the omelet cool for a minute before eating, as it will be very hot.
