Ingredients

1 pound Salmon
2 cups cooked white rice
1 Lemon, raw
Kosher salt, freshly ground pepper, and paprika (to taste)

Directions

  1. Cook the white rice according to the package instructions and set it aside.
  2. Clean the salmon and pat it dry.
  3. Cut the salmon into 24 1/2-inch cubes and coat all sides with a topping of kosher salt, freshly ground pepper, paprika, or any desired spice.
  4. Slide a piece of salmon onto a skewer.
  5. Heat 1/2 cup of canola oil in a large skillet over medium-high heat for one minute.
  6. Place the skewers in the pan and turn them every 2 minutes per side. Squeeze lemon juice over the skewers as they cook.
  7. To serve, place 1/2 cup of rice on plates and place 2 skewers on top. Squeeze a hint of lemon juice over the skewers, if desired.
