Corn Quesadillas


Looking for a simple and flavorful twist on classic quesadillas? These Corn Quesadillas are filled with delicious corn and melted cheese for a satisfying and tasty meal!

Ingredients

cooking oil spray
1 median green onion, chopped
1 red bell pepper, seeded and chopped
1 onion, medium, peeled and chopped
1 cup canned corn, drained
4 flour tortillas (10-inch)
1 cup cheddar cheese, shredded low-fat
1/2 cup salsa

Directions

  1. Spray a pan with cooking oil spray.
  2. Cook the chopped vegetables over medium heat for 4-5 minutes, stirring frequently. Remove from the pan.
  3. Spray the pan again with cooking oil spray. Place one tortilla in the pan and sprinkle half of the cooked vegetables and half of the shredded cheese on top.
  4. Place the other tortilla on top. Cook on medium heat for 4-6 minutes or until the cheese starts to melt and the bottom tortilla starts to brown.
  5. Flip the quesadilla and cook for another 4 minutes or until the tortilla browns.
  6. Cut each quesadilla in half. Serve with salsa.

Notes

When using canned or frozen corn, make sure to drain and pat dry the corn kernels before adding them to the quesadillas. This will help prevent the quesadillas from becoming too watery.

Feel free to customize your quesadillas with additional ingredients such as sliced jalapeños, diced tomatoes, or chopped fresh herbs like cilantro or parsley.

For a crispy and golden-brown quesadilla, you can brush the tortillas with a little bit of oil or melted butter before cooking them.

To keep the quesadillas warm while cooking in batches, you can place them on a baking sheet in a preheated oven set to low heat.

Don't overcrowd the pan when cooking the quesadillas, as this can make flipping them difficult. Cook them in batches if needed.

Experiment with different salsa varieties to find your favorite flavor combination. From mild to spicy, there are plenty of options to choose from.
