Tuna Sandwish with Green Chiles

Ingredients

5 ounces canned tuna, packed in water, drained and flaked
1 can chopped green chilies (1-4.25 oz. can)
1/4 cup diced celery
1/4 cup diced red onion
1/4 cup reduced-fat mayonnaise
2 tablespoons chopped fresh cilantro or parsley
6 slices of whole grain bread
Lettuce leaves

Directions

  1. In a large bowl, combine the tuna, green chilies, celery, red onion, mayonnaise, and chopped cilantro. Toss to mix well and season with salt and pepper to taste. Set aside.
  2. Toast the bread slices until golden brown.
  3. Spread the tuna mixture onto one side of each bread slice.
  4. Place the remaining bread slices on top to make sandwiches.

Notes

Choose high-quality tuna: Look for high-quality canned or fresh tuna that is packed in water or olive oil. Drain the tuna well before mixing it with the other ingredients.
