One Pan Sausage and Zucchini

Ingredients

16 ounces (1 pound) ground sausage
1 small onion, diced
3 small zucchini, diced
3 small yellow squash, diced
3 medium potatoes, peeled and diced
1 can Italian stewed tomatoes, cut up

Directions

  1. In a skillet, brown the ground sausage and diced onion together. Drain any excess grease.
  2. In a mixing bowl, combine the browned sausage and onion with the diced zucchini, yellow squash, potatoes, and Italian stewed tomatoes.
  3. Transfer the mixture to a casserole dish.
  4. Cover the dish with foil and bake at 350 degrees Fahrenheit for 45 minutes.
  5. Remove from the oven and let it cool slightly before serving.
