Wonderful Stuffed Potatoes


Stuffed potatoes are incredibly satisfying and can even be enjoyed as a main course. These delectable potatoes make a perfect accompaniment to grilled or baked meat, fish, or tofu, adding a cozy and comforting element to your meal.

Ingredients

4 medium baking potatoes
3/4 cup low-fat cottage cheese (1%)
1/4 cup low-fat milk (1%)
2 tablespoons soft tub margarine
1 teaspoon dill weed
3/4 teaspoon herb seasoning
4 dashes hot pepper sauce
2 tablespoons grated Parmesan cheese (2 teaspoons)

Directions

  1. Prick the potatoes with a fork and bake them at 425°F for about 60 minutes, or until a fork easily inserts into the potatoes.
  2. Once the potatoes are cooked, cut them in half lengthwise. Carefully scoop out the potato flesh, leaving about 1/2 inch of pulp inside the potato shells.
  3. In a large bowl, mash the potato pulp.
  4. Add the remaining ingredients (except Parmesan cheese) to the bowl and mix them in by hand until well combined.
  5. Spoon the mixture back into the potato shells.
  6. Sprinkle the top of each stuffed potato with 1/4 teaspoon of Parmesan cheese.
  7. Place the stuffed potatoes on a baking sheet and return them to the oven.
  8. Bake for an additional 15-20 minutes, or until the tops are golden brown.
  9. Remove from the oven and serve the delicious stuffed potatoes as a filling entrée or as a side dish alongside grilled or baked meat, fish, or tofu.

Notes

Choose the right potatoes: Russet potatoes work best for this recipe because they have a high starch content, which results in a fluffy interior when baked.

Pierce the potatoes: Before baking the potatoes, be sure to pierce them with a fork several times. This will allow steam to escape and prevent the potatoes from exploding in the oven.

Bake the potatoes until tender: Bake the potatoes in the oven until they are fork-tender, about 45 minutes to an hour. The exact time will depend on the size of the potatoes.

Let the potatoes cool slightly: Once the potatoes are done baking, let them cool for a few minutes before handling them. This will make it easier to handle them without burning your fingers.

Scoop out the potato flesh: Use a spoon to carefully scoop out the potato flesh, leaving about 1/4 inch of potato around the skin. Be careful not to tear the skin.

Mix the potato flesh with the filling ingredients: In a bowl, mix the potato flesh with the other filling ingredients such as cheese, bacon, green onions, or sour cream. Make sure to thoroughly combine the ingredients to ensure an even distribution of flavors.

Stuff the potato skins: Use a spoon to fill the potato skins with the mixture. Press down lightly to ensure the filling is evenly distributed.

Bake the stuffed potatoes: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until the cheese is melted and the filling is heated through.

Add toppings: After baking, you can add additional toppings such as chopped herbs, crumbled bacon, or more cheese to give the stuffed potatoes extra flavor and texture.
