Simple Microwave Potatoes Primavera

Ingredients

4 medium potatoes
4 cups frozen mixed vegetables
1 teaspoon olive oil
1 1/4 cups non-fat sour cream
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Black pepper (to taste)
Toppings of your choice (e.g., shredded cheese, chopped scallions)

Directions

  1. Pierce each potato several times with a fork. Rub olive oil over the potatoes and sprinkle them with salt and pepper.
  2. Microwave the potatoes on high until they are tender, approximately 3-4 minutes per potato.
  3. Steam the mixed vegetables until they are hot.
  4. In a separate bowl, mix the sour cream with the dried herbs and black pepper.
  5. Split the potatoes in the center and fill them with the steamed vegetables.
  6. Top the filled potatoes with the sour cream mixture and optionally add shredded cheese.
